Collins Crab Dip

Watch out this recipe causes a frequent Freudian slip.  This recipe is infamous in our house for its difficult to pronounce name.  It is addictive otherwise we wouldn’t make it out of sheer embarrassment over the mispronounciation.  I warned you.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 c mayo
  • 1 Tbsp lemon juice
  • 1/4 tsp hot pepper sauce/tabasco sauce
  • 3 scallions finely chopped
  • 12 oz lump crab meat, drained
  • 1/2 tsp each salt, pepper
  • 2-3 Tbsp fresh Parmesan cheese

Heat oven to 400 F.  With wooden spoon mix cream cheese and mayo until light and fluffy.  Stir in lemon juice, pepper sauce & scallions.  Fold in crab, salt and pepper. Spread in 3 cup baking dish, sprinkle cheese on top.  Bake 15-20min until bubbly & top is golden.  Serve with baguette slices.
