Colton Curried Chicken Salad

Serves 2

Ingredients

  • 1 chicken breast, poached
  • 3 slices bacon
  • 1/4 c almond slivers
  • 2/3 c red grapes
  • 1 tsp curry powder
  • 1/4 c mayo
  • 1 Tbsp Major Grey Chutney

Shred chicken breast with a fork.  Cook bacon in microwave according to package directions.  Cool slightly then chop into small pieces. Toast almond slivers on 400 for 3 minutes or until golden brown and fragrant.  Mix chutney, mayo and curry powder together.  Add chicken, bacon, almonds and grapes to sauce and toss to combine.  Serve chilled or at room temperature.

To serve 8-10, use the following proportions:

  • 6 chicken breasts, poached
  • 1/2 lb bacon
  • 1 c almond slivers
  • 3 c red grapes
  • 4 tsp curry powder
  • 1 c mayo
  • 4 Tbsp Major Grey Chutney
